Turkey Vegetable Meatballs

Ingredients
- 1/2 cup minced turkey breast
- 1 small bell pepper, diced
- 1 small red onion, sliced
- 1/2 cup black beans
- 1 cup of cherry tomatoes (149 g)
- 2 garlic cloves, sliced
- 1/4 cup of natural oatmeal
- 1 teaspoon coriander
- 1 tablespoon of chopped parsley
- 1 teaspoon of olive oil
- ½ lime juice (44g)
- Salt and pepper to taste
Instructions
- Make the meatballs: In a bowl, combine the meat, oats, lemon juice, cilantro, and parsley. Add salt and pepper to taste. Lightly knead the ingredients until well mixed. Shape into balls.
- In a skillet, heat the oil. Cook meatballs until golden brown. Remove from the pan.
- In the same skillet, add the onion and garlic. Fry until soft.
- Put the meatballs back in the skillet and add pepper, beans, and tomatoes. Cook until ready to serve.

- You can serve them with boiled platains.
