Healthy turkey vegetable meatballs recipe.

Ingredients

  • 1/2 cup minced turkey breast
  • 1 small bell pepper, diced
  • 1 small red onion, sliced
  • 1/2 cup black beans
  • 1 cup of cherry tomatoes (149 g)
  • 2 garlic cloves, sliced
  • 1/4 cup of natural oatmeal
  • 1 teaspoon coriander
  • 1 tablespoon of chopped parsley
  • 1 teaspoon of olive oil
  • ½ lime juice (44g)
  • Salt and pepper to taste

Instructions

  1. Make the meatballs: In a bowl, combine the meat, oats, lemon juice, cilantro, and parsley. Add salt and pepper to taste. Lightly knead the ingredients until well mixed. Shape into balls.
  2. In a skillet, heat the oil. Cook meatballs until golden brown. Remove from the pan.
  3. In the same skillet, add the onion and garlic. Fry until soft.
  4. Put the meatballs back in the skillet and add pepper, beans, and tomatoes. Cook until ready to serve.

Notes

  • You can serve them with boiled platains.
  • I also serve them alongside with salad as a side dish.
